I am definitly an early bird, but sometimes even I am in a hurry – especially when my kids come up with something really urgent that they should have better told me the night before. For me this small, light snack is a life saver because it takes only 10 min to prepare and I can eat it on the go. The colors of the orange physalis and the blueberries match very well (and even better, there is no chopping needed), but you can use any fresh fruit in season.
Ingredients (1 serving)
2 tbsp rolled oats
1 tbsp cane sugar
10 tbsp natural soy yogurt
a handful blueberries
a handful physalis
Step 1
Heat a small coated pan and toast the rolled oats until crunchy, stirring constantly. Add 1 tablespoon of whole cane sugar and stir thoroughly just until the sugar is melted. Remove the oats from the pan immediately to prevent from burning.
Step 2
Pour soy yogurt in a small bowl and topp with your fresh fruits and the crunchy muesli. Enjoy!
