Black Rice Salad

I never saw red raisins before. When I spotted them, I instantly knew what I wanted to do with them: Throw them into a bowl of black rice together with cape gooseberries. Black Rice is such a good thing, full of anthocyanins, which help to prevent cardiovascular diseases (amongst other health benefits). And it tastes great – super nutty! You just have to brush your teeth afterwards ;-).Try this recipe and tell me whether you liked it or not.


80 g black rice
200 ml water
2 tbsp raisins (red or green or yellow)
1 tbsp lime juice (or to taste)
2-3 tbsp freshly squeezed orange juice
1 tbsp Xucker light (or sweetener of choice)
10-15 cape gooseberries

Step 1

In a pot with tight fitting lit bring water to the boil. Add a pinch of salt and black rice. Bing to the boil again and cook with closed lid for 40 min. Allow to rest for for a while.

Step 2

Transfer rice to a bowl, allow to cool and add all other ingredients. Enjoy!Collection of fresh fruit and vegetable slices on white background
