I love the bright color of pomegranate seeds – they make the simplest dishes look special, like this apple salad. I prefer crisp apples, such as Pink Lady, Kanzi or Braeburn. If you toast the pine nuts in a small pan, you add a wonderful crunchiness to this salad.
Ingredients Apple Salad with Mint & Pine Nuts
(1 Serving)
1 medium apple (about 190 g), diced
1 tbsp lemon juice
1 tsp maple syrup
½ tsp dried mint
1 tbsp pomegranate seeds
1 tsp pine nuts (or sunflower seeds)
Step 1
In a coated pan, toast the pine nuts until golden brown, stirring constantly. Put aside.
Step 2
In a small bowl, toss the diced apples with lemon juice, maple syrup, mint and mix.
Step 3
Sprinkle pomegranate seeds and pine nuts over the salad.
